Simple tofu Stir-fry


Hello ladies, we know that you all have very busy schedule during the day and don't want to come home and spend hours slaving in the kitchen. If you're looking for a super simple, very tasty and healthy meal here is one that won't take too long to make and has ingredients found in almost everyone's kitchen.
The Ingredients for this simple stir fry are:
  1. Half a container of extra firm tofu cut into cubes
  2. 1 Carrot
  3. 2 Scallions
  4. 2 Large mushrooms
  5. Fresh ginger root
  6. 2 Garlic cloves
  7. 2 tbsp. Soy sauce
  8. 1 1/2 tbsp. Sesame oil
  9. 1 tbsp. Fresh Cilantro(for garnish)
Optional
  1. 1 tbsp. Hoisin Sauce
  2. 1/2 tsp. Red chili flakes
  3. 1 tsp. Toasted sesame seeds(for Garnish)
**Note: You can add any veggies you would like such as snow peas, green bell pepper or even throw in some cabbage. Possibilities are endless. Also this recipe is for two serving feel free to double or even triple the recipe for a full family meal.

Once you have all of the ingredients for the stir fry, it's time to cut up the veggies(I like to shred my carrots with a potato peel, it makes the work easy). Finely mince the ginger and garlic together to form a paste.

Next, you should heat up a medium sized pan, add the sesame oil and tofu cubes. Sauté on medium heat tossing the tofu every couple of minutes to brown all surface areas. Once the tofu has browned add in the ginger/garlic paste.

Add in the shredded carrots, diced mushroom, and soy sauce. Cover and let cook until veggies are tender, about 5 minutes. Add in the scallions(mostly the white parts, and some green) then toss.
At this point you can add in the hoisin sauce and chili flakes if you wish, let it sauté a few more minutes. Last, serve with steamed white or brown rice and garnish with the toasted sesame seeds, fresh cilantro and the remaining scallions.
